A fun little treat for my son's lunches this week :) They aren't light or healthy, just a box mix and canned frosting lol. Boring, but cute. Just make your favorite flavor cupcakes, let them cool, add a drop of frosting for a nose, and a band above, add some candy eyes, and then band across from top to bottom. I left a little bit unfrosted towards the bottom for a mouth, but not sure if that came across properly or not.

Lite Pumpkin Bread
I love fall....and all things pumpkin. I had to pick up a little baking pumpkin as soon as I saw them in the grocery store. I steamed it up today and made this loaf bread...it's sooo good, my whole picky family loves it.
Ingredients:
Baking Spray
1.5 Cups Fresh Pumpkin Puree
1.25 Cups Whole Wheat Flour
.75 Cups Sugar
2 TBSP Pumpkin Pie Spice
1 TSP Baking Soda
1/2 TSP Nutmeg
1/4 TSP Cinnamon
1/4 TSP Salt
2 TBSP Canola Oil
1/4 Cup Egg Beaters
1.5 TSP Vanilla Extract
Directions:
1. Spray a loaf pan and preheat the oven to 350*.
2. Mix dry ingredients with a whisk in a medium bowl.
3. Beat the rest of the ingredients with a mixer for 3 minutes. Add the dry ingredients to the wet, and beat until just mixed.
4. Baked 50 - 55 Minutes.
5. Eat - it's so yummy.
It makes 16 - half in thick servings. Each serving has 94 Calories, 2.1 G Fat, 1.9 G Protein and 1.8 G Fiber.
