This was my first time ever making lemon bars. I am not usually a fan of lemon, but these have changed my mind. They are delicious, light and fluffy with just the right amount of sweetness and tart. (If you like more tart, add 1/2 tbsp more lemon juice).
Ingredients:
Non-Stick Cooking Spray
3/4 Cup Whole Wheat Flour, plus 2 tbsp
2/3 Cup Sugar, plus 3 tbsp
1/2 Stick Cold Butter or Margarine (cut into pieces)
1/4 & 1/8 Cup Egg Beaters
1/4 tsp Grated Lemon Zest
2 tbsp Lemon Juice
1 tbsp Water
1/4 tsp Baking Powder
1 tbsp Powdered Sugar
Directions:
1. Spray an 8 x 8 x 2 baking pan with Non-Stick Cooking Spray.
2. Preheat oven to 350*.
3. In a small mixing bowl, combine 3/4 c. Flour and 3 tbsp Sugar; cut in cold butter until crumbly. (If you don't have a pastry cutter and butter knives aren't doing it, mix with your hands until it sticks together and is crumbly.)
4. Pat mixture into the bottom of the baking pan and bake for 15 minutes.
5. In the same bowl, beat eggbeaters with electric mixer on medium until frothy. Add the rest of the sugar and flour, lemon zest, lemon juice, water, and baking powder. Beat on medium for 3 minutes.
6. Pour mixture over baked crust in pan. Bake 20 to 25 minutes more.
7. Cool in pan on wire rack.
8. Once cool, sprinkle powdered sugar over the top.
9. Try not to eat the whole pan, and store leftovers in the refrigerator.
Makes 9 bars.
